I'm enjoying my vacation time with Pat and his family at the beach working on my tan, catching up on reading and spending some time just living.

Weekly Inspiration

I need a little motivation to get me through this week! I have a ton of projects to wrap up before I leave for vacation on Friday so a little encouragement about how awesome I am is just what I need to motivate me this week. 

Also, it never hurts to be your own biggest cheerleader!

Buffalo Wing Lettuce Wraps

Yum. This is the perfect dinner to make when you want some super unhealthy wings slathered in dressing! It's also gluten free - so if you're trying to stay away from bread, it's a tasty, easy option.

Here's what you'll need:
^ 2 chicken breasts
^ Buffalo wing sauce
^ Lettuce {Romaine or Butter}
^ Ranch or Blue cheese dressing {I use ranch dressing because Pat hates blue cheese, so I forgo that on his and add it on mine :) }
^ Broccoli slaw {for crunch}
^ Blue cheese crumbles

















I cooked the chicken in my crockpot because I had time today, but you could just as easily use a pressure cooker. I put 1 cup water in with the frozen chicken breasts and some salt, pepper and buffalo wing sauce. I kept the seasoning simple because the wing sauce has enough flavor and would overpower everything anyways. I cooked the chicken on high for about 5 hours. When the chicken was shredded and I was ready to serve dinner, I drained the rest of the liquid using a strainer, put the chicken back in the crock pot and then added more wing sauce. When all was said and done, I used about half the bottle.

Next comes the assembly - lettuce leaves, a spoonful of buffalo chicken, the broccoli slaw {which gives it an awesome crunch and adds a few veggies to our diets} a little ranch dressing and then bleu cheese crumbles.





























Note: It's a messy affair to eat as a wrap - Pat made a big 'ol mess, so I opted to cut it up like a salad and it was equally as delicious!

Make A Statement

I wear a lot of neutral colors so I love accessorizing with colorful necklaces. I also LOVE Baublebar! They have the cutest necklaces and are so affordable. Here are some of my favorites!

1. Loft striped maxi skirt (not listed online, but available in stores)
^ I was a little nervous buying my first maxi skirt, but this Loft skirt was so adorable I couldn't pass it up. I LOVE it. Maxi skirts are so comfy and cute at the same time. Because my office is more on the casual side, I will definitely be able to wear it to work and get so much use out of it!

2. Stella and Dot on the Mark necklace 
^After posting about how I had my eye on this necklace here, I decided that I had to get it for the summer. It's so delicate and cute and goes with everything. It will definitely become a staple for the summer.

3. Loreal BB cream 
^I read a review about bb cream and it said that Loreal had the best budget cream, so I had to pick it up when I was at CVS. I love it! It's not too heavy on your skin {great for summer}, it covers imperfections and matches my skin tone so well - I have to say that i'm a bb cream convert now! And for only $10.99 when brand name creams are around $40, you absolutely can't beat the price.

4. Jergens natural glow lotion 
^Now that it's starting to get warm it's time to start breaking out my shorts and skirts. Unfortunately, my legs haven't seen sunshine in months and are scary. This is the best lotion that gradually adds a natural looking color, doesn't get streaky and actually smells decent!

5. OPI nail polish in Alpine Snow
^ I've been really into white nail polish lately - it just goes with everything and looks so chic. I like this polish because it actually covers in 2 coats and you don't see the brush strokes. The color actually lasts a solid 4-5 days before chips as well!

I spend a little too much time on Pinterest, i'll admit that. So I finally figured that if i'm putting in all of that time, I might as well organize my favorite finds into a weekly blog post!

1. Favorite Recipe - Summer Spaghetti 
^I love pasta and this is a great way to make it a little lighter for the summer time! Bonus - it's a super easy recipe to make for a weeknight when you don't feel like cooking.








































2. Favorite Sweet Treat - Lofthouse cookie knock off recipe
^ These are the cookies you can buy at Target and Giant and are so soft and yummy. I'm obsessed with them and can easily eat the entire package in a day. I can't wait to try to make them myself - to then eat the entire batch in a day.







































3. Favorite DIY - Make your own party pom-poms
^I'm planning a bridal shower and think that this would be the perfect inexpensive decoration to help add some color to the festivities!








































4. Favorite Printable - You're a Peach
^I love switching out the pictures that are in frames around our house. If I was constantly buying new pictures, this could get super expensive. Instead I just find adorable and fun graphic printables that I can add in to the frames. This fun saying is currently displayed on my entrance table and makes me smile every time I grab my keys.







































5. Favorite Style Item - Mint colored Vans sneakers
^As soon as I saw these vans sneakers making their way around Pinterest, I knew that I had to have them. I've been looking for a cute pair of sneakers that go with skinny jeans to wear when we run errands {like to Home Depot - because ballet flats just don't cut it there} I bought them later that day and can't wait until they arrive! {side note, these will be my first sneakers that i've owned since high school - running shoes not included}
